A million times more than a simple sprinkle for pasta, Parmigiano Reggiano, known as the “king of cheeses”, is aged for two years or more and is . It’s unique notes of umami – the ‘fifth taste’ add richness and depth to a wide variety of ‘parmigiana’ recipes.
Fior di capra is a light, fresh goat’s cheese. Delicate and very slightly tangy, it’s great in salads or served with crudités, and complements such sweet accompaniments as fresh fruit or confitures, or even honey.
Gorgonzola has been produced in Lombardy for more than 1,000 years, making it one of the world’s oldest blue cheeses. We stock the stronger and firmer gorgonzola piccante and sweeter, softer gorgonzola dolce — both ideal for pizzas, pasta sauces and risottos, and gorgonzola with mascarpone, which gives it a creamier and more delicate flavour.
Provolone, originating from southern Italy, is aged for two (provolone dolce) and four months (provolone piccante), its strong flavour making it perfect for pairing with red wines. Fontal, also aged, is often melted and like gorgonzola, served with polenta.
